Why is that so? These are high-performance cars running hot. If the owner makes a mistake and pushes the car too hard (say at the track or inconsistent speeding/excessive bouts of acceleration) the car may not cut its power down in time to cool down and just come to be on fire.

Lots of performance cars run hot and manage it properly. In overheating situations the car should warn the driver that it's over temp and even go into limp mode when it's way too over temp.
